Sausage and Roasted Vegetables
This easy sheet-pan dinner comes together quickly for a nutritious weeknight meal the family will love.
Ingredients
- 2 packages Smoked sausage sliced
- 2 White potatoes diced. Leave the skins on for extra nutrients
- 2 carrots peeled and sliced
- 1/2 large white onion sliced
- 1 bag Brussels sprouts, halved
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp salt
- 1/2 tsp pepper
- 2 tbsp olive oil
- soy sauce
Instructions
- Preheat oven to 400 degrees while you slice everything up.
- Line a large baking sheet with aluminum foil and spray with oil.
- Add all the ingredients, spreading them out as much as possible in one layer.
- Drizzle with 1 tbsp of olive oil, sprinkle with seasonings, and mix.
- Add the remaining tbsp of oil and mix again.
- Bake for 25 to 30 minutes until vegetables are soft and sausage is browned.
- Serve with soy sauce drizzled on top.
