Whole30 Egg Roll Meatballs (adapted)

Here's my take on the Whole30 Egg Roll Meatballs recipe! Kids LOVED it!

Ingredients
  

  • 3 green onions finely chopped, including the white parts
  • 2 cups coleslaw mix finely chopped
  • 1.5 lbs ground turkey, chicken, or port
  • 2 tsp garlic powder
  • 1 tsp sale
  • 1/2 tsp pepper
  • 1/2 tsp ginger
  • 1 tbsp flour if needed

Equipment

  • 1 Air Fryer

Method
 

  1. Chop onions and coleslaw mix. You can also use a food processor but I find chopping is way easier to clean up!
  2. Add ground meat and all other ingredients. Mix with hands until everything is evenly distributed. Do not overmix!
  3. Shape into 24 to 30 1 1/2 tbsp size meatballs.
  4. Spray air fryer basket with olive oil and arrange meatballs in single layer. You may need to do more than one batch.
  5. Air fry at 400 degrees for 10 – 12 minutes or until cooked through and browned.
  6. Enjoy alone or alongside steamed vegetables or a large salad.
