Turmeric Chicken & Veggie Skillet

Ingredients
  

  • 1.5 lbs chicken thighs or breasts diced
  • 1 tbsp olive oil
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1/2 tsp black pepper
  • 1/2 tsp sea salt
  • 1 bell pepper sliced
  • 1 zucchini sliced
  • 1 head broccoli chopped
  • 1 small red onion sliced

Method
 

  1. In a large skillet, heat olive oil and sauté chicken with turmeric, cumin, salt, and pepper until golden.
  2. Add all chopped veggies and cook 7–10 minutes until tender.
  3. Serve over cauliflower rice or roasted sweet potatoes for a complete meal.
