The other night, I forgot to defrost the chicken breast for dinner. Never fear! ChatGPT to the rescue, coming up with a banger Mediterranean Chicken dinner. Plus, I used up pantry ingredients. Budget-friendly and yummy!

This recipe uses up what's in the pantry and you don't have to defrost the chicken!

Ingredients
  

  • 1 cup Brown rice
  • 2 cups Chicken Broth
  • 15 oz Diced Tomatoes
  • 2 Large Chicken Breasts Frozen
  • 1 jar Roasted Red Peppers
  • 15 oz Cannellini Beans
  • 1 jar Green Olives
  • 1 tsp Italian Seasoning
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • Salt and Pepper to taste
  • Feta topping if desired

Equipment

  • 1 Instant Pot

Method
 

Add to Instant Pot
  1. Pour in:
  2. rice
  3. broth
  4. diced tomatoes
  5. seasonings
  6. Stir.
Then add:
  1. frozen chicken breasts on top
  2. roasted red peppers
  3. olives
  4. beans
  5. Do NOT stir after adding chicken.
Pressure cook: 22 minutes
  1. Natural release: 10 minutes
Finish
  1. Remove chicken, Shred or slice, Stir back in
  2. Taste and add:
  3. extra salt
  4. parmesan or feta
  5. squeeze of lemon if you have one
