Pumpkin Spice Protein Muffins
These muffins are great for grab-and-go breakfasts or a healthy snack that feels like a treat.
Ingredients
Method
- Preheat oven to 350°F and line or grease a muffin tin.
- In a large bowl, whisk together the pumpkin, eggs, oil, maple syrup, milk, and vanilla.
- Add dry ingredients (oat flour, protein powder, almond flour, baking soda, baking powder, spices, salt) and mix until just combined.
- Fold in chocolate chips or nuts if using.
- Scoop into muffin cups and bake for 18–22 minutes or until a toothpick comes out clean.
- Cool before storing. Store in fridge for up to 5 days or freeze.
