Pumpkin Spice Protein Muffins

These muffins are great for grab-and-go breakfasts or a healthy snack that feels like a treat.

Ingredients
  

  • 1 cup canned pumpkin not pumpkin pie mix
  • 2 eggs
  • 1/4 cup melted coconut oil or olive oil
  • 1/3 cup maple syrup or honey
  • 1/4 cup unsweetened almond milk
  • 1 tsp vanilla extract
  • 1 1/4 cups oat flour or finely ground oats
  • 1 scoop Legion Whey+ Vanilla protein powder
  • 1/2 cup almond flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 2 tsp pumpkin pie spice
  • 1/2 tsp cinnamon
  • Pinch of salt
  • Optional: 1/4 cup dark chocolate chips or chopped walnuts

Method
 

  1. Preheat oven to 350°F and line or grease a muffin tin.
  2. In a large bowl, whisk together the pumpkin, eggs, oil, maple syrup, milk, and vanilla.
  3. Add dry ingredients (oat flour, protein powder, almond flour, baking soda, baking powder, spices, salt) and mix until just combined.
  4. Fold in chocolate chips or nuts if using.
  5. Scoop into muffin cups and bake for 18–22 minutes or until a toothpick comes out clean.
  6. Cool before storing. Store in fridge for up to 5 days or freeze.
