These protein breakfast muffins are easy to make and freezer friendly.

Ingredients
  

  • 1 cup rolled oats
  • 1/2 cup whole wheat flour
  • 1/4 cup protein powder vanilla or unflavored
  • 1/4 cup unsweetened applesauce
  • 1/4 cup milk any type
  • 1 egg
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup chopped nuts or seeds optional
  • 1/4 cup dried fruit optional

Method
 

  1. Preheat oven to 375°F (190°C). Grease a muffin tin.
  2. In a large bowl, combine oats, flour, protein powder, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk together applesauce, milk, and egg.
  4. Combine wet ingredients with dry ingredients, mixing until just combined.
  5. Stir in nuts and dried fruit (if using).
  6. Divide batter evenly among muffin cups.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.
  9. Store in an airtight container in the refrigerator for up to 3 days or freeze for longer storage.
