Mediterranean Ground Beef and Rice (adapted)

This is a great healthy dinner or lunch meal prep. You can leave out the rice, if you want. Kid-friendly!

Ingredients
  

  • 1 tbsp olive oil
  • 1 red bell pepper diced
  • 1 pint cherry tomatoes sliced in half
  • 8 ounces baby spinach
  • 4 cloves garlic minced
  • 2 green onions thinly sliced, white and green parts separated
  • 1 lb ground beef
  • 1/2 tsp dried oregano
  • kosher salt and black pepper to taste
  • 4 tbsp feta crumbled

Method
 

  1. Heat oil in a large pan on medium-high heat. Add the bell pepper and cherry tomatoes and saute for 4 to 5 minutes. Add garlic and stir for another minute.
  2. Add spinach and white parts of green onions. Stir until spinach wilts down. Remove veggies to a mixing bowl.
  3. Add ground beef, oregano, salt and pepper and brown the beef. Drain grease.
  4. Transfer veggies back to the pan and add green parts of the green onion.
  5. Garnish with crumbled feta before serving.
  6. If using rice, prepare 4 servings of rice while you cook the stir fry. Serve the meat and veggie mixture over rice.
