Ingredients
  

  • 1.5 lbs boneless skinless chicken thighs or breasts
  • 1 medium eggplant cubed
  • 1 red bell pepper chopped
  • 1 zucchini chopped
  • 1 small red onion diced
  • 1 14.5 oz can fire-roasted diced tomatoes
  • 1 15 oz can chickpeas, drained and rinsed
  • 3 cloves garlic minced
  • 1 ½ tsp dried oregano
  • 1 tsp ground cumin
  • ½ tsp smoked paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp olive oil
  • 1 cup kalamata olives optional

Method
 

  1. Layer veggies and chicken: In the crockpot, place eggplant, bell pepper, zucchini, onion, and garlic. Top with chicken.
  2. Add flavor: Sprinkle over oregano, cumin, paprika, salt, and pepper. Pour in diced tomatoes and chickpeas. Drizzle with olive oil.
  3. Cook: Cover and cook on low for 8 hours.
  4. Finish and serve: Shred chicken or leave in chunks. Stir in olives before serving.
