Ingredients
  

  • 6 cups baby spinach or spring mix
  • 1 cup sliced strawberries
  • 1/2 cup crumbled feta cheese or goat cheese
  • 1/3 cup candied pecans or walnuts
  • 1/4 red onion thinly sliced
  • Optional: grilled chicken or rotisserie chicken for protein boost
Dressing
  • 3 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • Salt & pepper to taste
  • Shake in a mason jar or whisk it up!

Method
 

  1. Toss greens, strawberries, onion, cheese, and nuts in a large bowl.
  2. Add protein if using.
  3. Drizzle with dressing right before serving.
