Ground Turkey and Sweet Potato Skillet

This "must-go" meal is a great way to use up ingredients you might have left in your refrigerator.

Ingredients
  

  • 1 lb Ground turkey
  • 3 medium sweet potatoes diced
  • 1` medium bell pepper diced
  • 1/2 onion diced
  • 2 cloves garlic minced
  • 1/4 cup chicken broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp oregano
  • 1 tsp paprika
  • salt and pepper to taste
  • 1/2 cup shredded cheese of your choice (optional)

Method
 

  1. Brown the ground turkey.
  2. While the turkey is browning, place diced sweet potatoes in a microwave-safe bowl, add 1/2 cup of water, cover and microwave for 5 to 6 minutes or until soft.
  3. Add diced green peppers, onion and garlic to the turkey just before it's all browned.
  4. Add chicken broth and sweet potatoes (cooked).
  5. Add spices.
  6. Top with cheese, if desired, and put into meal prep containers or enjoy as a weeknight meal.
