Method
- Brown the ground turkey.
- While the turkey is browning, place diced sweet potatoes in a microwave-safe bowl, add 1/2 cup of water, cover and microwave for 5 to 6 minutes or until soft.
- Add diced green peppers, onion and garlic to the turkey just before it's all browned.
- Add chicken broth and sweet potatoes (cooked).
- Add spices.
- Top with cheese, if desired, and put into meal prep containers or enjoy as a weeknight meal.
