Ingredients
Olive oil
1 large onion, finely chopped
1 green pepper, finely chopped (optional)
4 cloves garlic, minced
1 cup red wine
28oz can of crushed tomatoes
28oz can of tomato puree
6oz can of tomato paste
1 tbsp dried basil
1 tbsp dried oregano
1 tbsp parsley
1 tsp sugar
salt and pepper to taste
Note: You can use fresh herbs if you have them. Put whatever you like! You’ll need double the amount of the dried.
Instructions
Heat 2 tbsp olive oil in a large pot over medium heat.
Add diced onion and green pepper, if using
Once the vegetables are soft, add the garlic
Add the red wine and cook until you can’t really smell the alcohol anymore, usually 3 to 5 minutes
Add the crushed tomatoes, puree and paste and stir
Add the herbs and stir again
Lower the heat to low, cover and simmer at least a half hour and at most all day
You can add cooked sausage or meatballs to this. Sometimes I also add pepperoni for extra flavor.
